According to history Bairrada region was in the past a land of passage and of conquests, of fights between Christians and Arabs in the time of the formation of Portugal, when the capital of the kingdom was Coimbra and the way of the affirmation was towards the south. It was also a land of defense of independence threatened by the invading armies of Napoleon, detained in the mountain range of Bussaco.
The production of wine has serenely watched all these convulsions of the past, because their fruits have always been appreciated.
From the nineteenth century Bairrada became a region producing quality wines, although wine production existed since the 10th century. The scientist António Augusto de Aguiar studied wine production systems and defined the boundaries of the region in 1867 And in 1887 the Bairrada Viticulture Practical School was founded in 1887 to promote the region's wines and to improve wine growing and production techniques. The first practical result of the school was the creation of sparkling wine in 1890.
Also for that reason the expedition of wines to the outside, even to the foreigner, soon verified.
Wine production in the region is supported by cooperatives, small and medium-sized enterprises and small producers. Small farmers market so-called "farm wines" that have become very important in the region in recent years.
The Baga caste is the dominant ink variety in the region and is usually planted in clay soils. The wines made from the Baga caste are colored and rich in acid, yet are well balanced and have high longevity. Recently, it was allowed in the DOC region of Bairrada to plant international grape varieties such as Cabernet Sauvignon, Syrah, Merlot and Pinot Noir that share the land with other national grape varieties such as Touriga Nacional or Tinta Roriz.
The white varieties are planted in the sandy soils of the region, being the caste Fernão Pires (in the region denominated by Maria Gomes) the most planted. In smaller quantities there are the varieties Arinto, Rabo de Ovelha, Cercial and Chardonnay. The whites of the region are delicate and aromatic. The region's sparkling wines are widely used as aperitifs or to accompany the local cuisine.
