TASTING NOTES
Quinta dos Carvalhais Alfrocheiro 2012 is a slim and elegant wine. It is characterized by a ruby ??red color, delicate aromas and fine fresh fruits (strawberry and raspberry) and floral notes. They are still balsamic notes of pine, sous-bois and mushroom contributing to the great complexity of this wine. In the mouth it shows a remarkable elegance and smoothness, well-balanced acidity, with a new focus on the remarkable aromatic complexity of this exceptional variety of Dan. Its finish is long and elegant.

VINIFICATION
The grapes for part of the lot of this wine were harvested per plot, in small boxes of 20 kg, and at the time performed a rigorous qualitative selection of them, having been vinified separately. On arrival at the modern winery Quinta dos Carvalhais, the grapes harvested were unloaded by hand, box-to-box, directly to the destemmer / crusher. The resulting wine mass followed by gravity into small vats of fermentation in stainless steel where fermented about 8 days to about 26 ° C, with pumping for gentle extraction of flavor compounds and films.

MATURATION
After the alcoholic fermentation the wine was transferred into stainless steel tanks where it proceeded to malo-lactic fermentation, followed by a period of 12 months of training and maturation in French oak barrels (14% new), after which we proceeded to the preparation Lot, collage, filtration and bottling.

SAVE
Like all good red wines from Dão Quinta dos Carvalhais Alfrocheiro have a life in very expanded bottle, presented in good condition consumption for a period that easily reaches 10-15 years. The bottle should be kept horizontally in a dry, cool place.

SERVE
After aging in the bottle is natural to create some sediment, therefore it suggests its decanting. It should be served between 16ºC-18ºC.

ENJOY
Quinta dos Carvalhais Alfrocheiro 2012 is an excellent choice to accompany meat dishes, game and various types of soft cheese.
