Produced from, Trincadeira, Aragonez, Alfrocheiro, Periquita, Moreto and Tinta Caiada, planted in the vineyards of Eugenio de Almeida Foundation - Évora. These wines combine their quality to the name Carthusian monks who, since 1598, lead a solitary life of prayer in the Convent of Santa Maria Scala Coeli. When the grapes reach the ideal ripeness, are harvested and transported to the winery where begins the technological process with full and soft crushing stemming. Then the grapes are fermented separately in stainless steel tanks at a temperature of 27 ° C and a  following extended post-fermentation maceration. Aged for 12 months in barrels and French oak barrels and 6 months in bottle.

These are wines have a good structure, elegant and matching flavors of the grape varieties, lead to a persistent and complex flavor.
