Winemaking:
Destemming and crushing; 12H of pre-fermentative maceration at 34ºC to maximize the work of the endogenous enzymes, use of selected yeasts; Fermentation for a minimum of 10 days with temperature control. Malolactic fermentation
Varieties: Touriga Nacional, Touriga Franca.
Winemaker: João Silva e Sousa, Francisco Baptista.
Tasting Notes:
Color: Deep red with indigo reflections
Aroma: Very intense and powerful but fresh, dominated by the bergamot oil so characteristic of the Touriga Nacional, balanced with notes of forest fruits, blueberry, blackberry and very well integrated wood of high quality.
Evolution: Total stage time in barrel - 12 months
Solo: Xistoso
Climate: Hot and dry. Large thermal amplitudes.
Mouth: Extraordinarily elegant, with a lot of fresh volume and very well balanced
Mouth (end): Exceptionally long where floral and fruit notes of the forest return
Dishes: Dishes of elaborate and sophisticated cuisine. Intense cheeses.
